Keele University’s gold-medal winning catering team will be showing off its skills at the Staffordshire County Fair. Executive Chef, Peter Walters will be joined by trainee chef Kim Barnish, at 2.30pm in the HEFF sponsored food arena, where they will be demonstrating Kim’s award winning menu from 2005.
Kim, Keele’s 20-year-old rising star, was crowned Staffordshire Young Chef 2005 and worked alongside Gordon Ramsay’s team as part of her prize. Kim has also trained in Limoges, France where she worked at Restaurant Le Roy Gourmet St. Germain des Belles learning how French chefs operate and picking up new recipes and ideas.
Kim’s showcase menu will feature:
Fillet of Trout served on a Cushion of Sun-Dried Tomato Risotto
with Asparagus, Parmesan Shavings & Herb Salad
Canon of Moorland Lamb wrapped in Cured Ham & Spinach Mousse
Spring Cabbage, Baby Carrots, Glazed Shallot & ‘Potters Potato’
Toffee Cheesecake with Spiced Orange & Strawberries
& Pistachio Tuille
Peter’s team has also just received two gold awards at the TUCO (The University Caterers Organization) Competition including the top medal in the overall Chefs Challenge event. And, as they add to their collection of awards and trophies, the latest trainee chef, James Tudor, will be taking part in the Staffordshire Young Chef of Tomorrow 2006.
Janine Machin from Radio Stoke will be joining Kim and Peter on the day to provide a commentary for the event and all show visitors are welcome.
